SNICKERS® Fruit Blintzes

What you'll need:
  • 1 cup chopped SNICKERS® BRAND FUN SIZE®
  • 1 package (ten 9-inch crepes) French crepes
  • 3 cups whole milk ricotta cheese
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 2 large eggs
  • 2 tablespoons orange marmalade
  • 1/2 teaspoon cinnamon
  • 2 tablespoons vegetable oil
  • Confectioners’ sugar, for dusting
  • Large skillet
  • For the fruit topping:
  • 2 tablespoons butter
  • 3 tablespoons sugar
  • 2 apricots, sliced into thin wedges
  • 2 peaches, cut into thin slices
  • 1 cup sliced strawberries
What to do:
  1. Combine ricotta cheese, SNICKERS® BRAND FUN SIZE®, cream cheese, sugar, eggs, marmalade and cinnamon. Lay crepes flat and spoon 1/2 cup ricotta mixture into center. Fold opposite sides of crepe towards center so filling is tucked inside, set aside. Repeat process for all crepes.
  2. Heat oil in skillet over medium heat. Add blintzes, folded side-down; brown both sides.
  3. For fruit topping: Heat butter and sugar in skillet. Add fruit and cook for 4 minutes, stirring occasionally.
  4. Serve blintzes with warm fruit topping and dusting of confectioners’ sugar.
Makes 10 blintzes.
