Poached Pear Delight

What you'll need:
  • 1 cup TWIX® BRAND Caramel Cookie Bars, chopped
  • 6 medium pears, peeled
  • 2 quarts green tea iced tea
  • 1 cup sugar
  • 1 2-inch knob fresh ginger, peeled and sliced
  • 1 lemon juice
  • Glaze:
  • 1 cup pomegranate juice
  • 1/2 cup sugar
  • Filling:
  • 1/2 cup sliced toasted almonds, chopped
  • Raspberries, optional
  • Melon baller
  • Clean cotton dishtowel
What to do:
  1. Using melon baller, scoop a one-inch-deep hole in each pear’s core. Combine tea, sugar, ginger and lemon juice in large saucepan. Add pears and cover with dishtowel. Poach in rolling simmer. Remove from heat and cool pears in poaching liquid.
  2. Glaze: Combine one cup poaching liquid, pomegranate juice and sugar in a small saucepan. Simmer until reduced by half, about 20 minutes. Cool completely.
  3. Filling: Process TWIX® BRAND Caramel Cookie Bars and almonds until finely ground. Fill each pear with TWIX® BRAND Caramel Cookie Bars mixture. Drizzle glaze over pears before serving.
Makes 6 servings.
